Dinner Tonight! Roasted cauliflower with Lemon Pepper Chicken

Thanks to Emeril this cauliflower recipe hit the spot along side a boneless chicken breast sauteed lightly with olive oil and seasoned with lemon pepper..and as most days a bibb or romaine lettuce salad..A light salad, greens only  adds the right taste to blend in with most meals...

The Cauliflower roasted nicely..

 Here is Emeril's recipe..Fast and ready in 15 minutes.

5 or 6 cups  fresh cauliflower florets
1/4 cup extra virgin olive oil
1 tablespoon sliced garlic (I minced mine)
2 tablespoons lemon juice
1 tsp. salt
1/2 tsp. black pepper
2 tablespoons grated Parmesan cheese
chopped chives for garnish

Heat oven to 500 degrees..Place cauliflower florets in roasting pan..Drizzle olive oil over the cauliflower, and season with garlic and lemon juice, salt and pepper.  Place the pan in the oven and cook 15 minutes, stirring occasionally to ensure even roasting. Remove from oven and sprinkle with Parmesan. Garnish with chives and serve.

Healthy vegetables and Pasta

Lots of veggies in the refrigerator so I'm playing with some food. lol.  

In a large pan  place 1/4 to 1/2 cup olive oil.  Add sliced green and yellow peppers, 1/2 red onion sliced thin and 1/2 cup cooked green beans.  After they have cooked for several minutes add 2 cloves minced garlic, salt and pepper.  Allow to simmer for several minutes making sure as not to burn garlic.  Add 1/2 to 3/4 cup chicken or vegetable broth and simmer until veggies are tender.  Add 2 to 4 T. of Balsamic vinegar and saute until mixture starts to reduce. Add a handful of cherry tomatoes and cook until tomatoes start to crackle.  If you think mixture is too thick you can always add a little pasta water or chicken broth to mixture before tossing.  Saute Approximately 10 to 15 minutes.Serve over pasta or rice...Yummy!



Cook Pasta according to directions.  Drain and toss..Quick, easy and healthy too!  You really can't ask for more for a Budget Friendly Meal.  I'm figuring this meal cost approx. $6.50. I used 1 lb. of pasta. Easily feed 4.  Side salad would compliment this meal.





Add Balsamic now and cook until it reduces slightly.








  Note:  I added 2 T Balsamic vinegar and I think I could have easily added a little more.  Taste and adjust accordingly.  Mix in a little Pecorino Romano cheese and toss.  Serve over Angel Hair Pasta.
